Serves 2-3
1 tablespoon vegetable oil
2 skinless boneless chicken breast halve
1/4 mayonnaise
2 tablespoon ground cumin
1 large mango
1.2 cup chopped cashews
3 scallions
1 celery rib
salt and pepper to taste
red leaf lettuce leaves
Cook chicken for 10 minutes in skillet.
Mix together all other ingredients.
Enjoy.......... So good
